Classic roast potatoes

Potatoes roasted in Goose fat


1.5kg floury potatoes such as Desiree, Maris Piper or King Edwards
Goose fat
Salt and pepper


Preheat the oven to 220°C/425°F/Gas 7

Peel the potatoes and cut to size. Par boil in salt water for 5 mins, drain and toss in the saucepan to fluff up the edges.

Put a generous amount of goose fat in a roasting tin and put it in the oven until smoking. Carefully take the tin out of the oven and the add potatoes to the hot fat, turning as you go. Season with salt and pepper.

Put the tin back in the oven and cook for approximately 1hr or until the roast potatoes are golden on the outside and soft in the middle.
